Front Room Elevates Thai Cuisine with New À La Carte Creations and an Isaan-Inspired Lunch

New à la carte dishes and an Isaan-inspired lunch set bring fresh perspectives to Thai cuisine at Front Room, Waldorf Astoria Bangkok

Thai cuisine is constantly evolving, but its greatest expressions remain rooted in tradition. At Front Room, the signature Thai restaurant at Waldorf Astoria Bangkok, familiar flavors are being reinterpreted with contemporary techniques and thoughtful presentation, proving that innovation and authenticity can comfortably share the same table.


Launching from 1 August 2026, the restaurant introduces a collection of new à la carte dishes alongside a three-course lunch inspired by the culinary heritage of Isaan. Together, the menus celebrate Thailand's regional diversity while showcasing the premium ingredients and refined cooking that have become Front Room's hallmark.


A Contemporary Expression of Thai Cuisine


Led by Chef de Cuisine Athiti Moungthong, the new menu explores the richness of Thai cuisine through dishes that remain faithful to their origins while embracing modern culinary techniques.


"We wanted to reinterpret dishes that many guests know and love while preserving their authentic essence," says Chef Athiti. "At the same time, we introduce new dimensions through technique, composition, and presentation, allowing guests to experience Thai cuisine from a fresh perspective."


The result is a menu that feels both familiar and unexpected, drawing inspiration from recipes found across the country while elevating them through meticulous craftsmanship.

Classic Thai Dishes, Reinterpreted


Among the standout starters is Yam Nuea Yang Makhuea Phao, a refined interpretation of grilled beef salad inspired by traditional grilled eggplant relish. Premium 270-day grain-fed Black Angus striploin is paired with charred eggplant, roasted spur chilies, and a vibrant Thai-style dressing that balances richness with refreshing acidity.


Seafood also plays a starring role. Talay Tom Tao Jiew transforms a classic coastal soup into a delicate clear broth infused with fermented soybean paste, ginger, lemongrass, and shallots before being finished with Andaman grouper, giant tiger prawns, squid from Chanthaburi, and premium crab meat.


For curry lovers, the restaurant's signature Gaeng Khiao Wan Pla Jaramet Dam Thot pairs fragrant green curry with crispy fried black pomfret and freshly pressed coconut cream scented with Thai basil. Another highlight, Choo Chee Man Goong, Goong Mae Nam Yang, enriches traditional choo chee curry with river prawn tomalley and prawn powder before serving it alongside a perfectly grilled giant river prawn.

A Midday Journey Through Isaan


The new three-course lunch shifts the spotlight to Northeastern Thailand, presenting Isaan cuisine through a more refined lens without losing its unmistakable identity.


The experience begins with dishes such as Naem Nuea Angus Jaew Makua, showcasing traditional meat fermentation with smoky tomato jaew, or Yum Tang Pla Ra Kai Kem, which celebrates the distinctive flavors of pla ra in a vibrant, balanced salad.


Main course options continue the regional journey with grilled chicken served alongside mushroom chili relish and local vegetables, a contemporary tom sab featuring black pomfret and dill oil, or stir-fried paco fern with Thai pickled garlic that highlights locally sourced produce.


Dessert arrives in the form of Mak Mao Sorbet, inspired by the indigenous berry of Northeastern Thailand and served with a crisp rice cracker for a refreshing finish.
