In Bangkok, April heat has a way of slowing everything down. It softens the pace of the city, shifts appetites, and brings certain dishes back into focus. Among them, khao chae remains one of the most anticipated, not just for its cooling effect, but for the sense of ritual it carries with it.


At Sindhorn Kempinski Hotel Bangkok, the dish returns this season at Flourish with a presentation that leans into its heritage without feeling overly ceremonial. It is thoughtful, composed, and unmistakably tied to the rhythms of Thai summer.



The foundation is familiar: jasmine rice, gently rinsed and soaked in chilled, scented water. Here, the rice is perfumed through the traditional technique of candle smoking, lending a soft floral aroma that feels restrained rather than showy. It is delicate and quietly refreshing, the kind of dish that reveals itself gradually.


The experience opens up through its accompaniments. Shrimp paste balls arrive crisp and deeply savory, while stuffed shallots bring a softer, caramelized sweetness. Banana chilies filled with minced pork and shrimp are wrapped in egg, adding richness without becoming heavy.


There is a careful balance in the sweeter elements. Caramelized dried turnip and shredded pork or beef offer depth, while a green mango salad with crispy shrimp introduces brightness and acidity. Fresh vegetables on the side keep everything grounded, offering contrast and a natural pause between bites.
