From grand hotel dominance to a city of world-class competition, Bangkok’s dining scene continues to evolve

Few cities have reinvented hotel dining quite like Bangkok. After nearly 100 visits since 1991, I have watched it evolve from a hotel-dominated dining scene into one of the most exciting and competitive food cities in the world.
When I first arrived, the grand hotels defined everything. Icons like Shangri-La Bangkok and Mandarin Oriental Bangkok were not just places to stay, they were the culinary heartbeat of the city. If you wanted the best Chinese, French, or Italian food in Bangkok, you booked a hotel table.
Standalone fine dining barely existed. Bangkok’s luxury hotels attracted not only international travellers but also Thailand’s high society. There was an energy to it. Restaurants were full, reservations were essential, and dining out felt like an event.
At the Shangri-La, Shang Palace delivered refined Cantonese cuisine that rivalled Hong Kong and still does. Angelini became one of the city’s most loved Italian restaurants and remains a classic. Across the river, Le Normandie (now Anne-Sophie Pic At Le Normandie) at the Mandarin Oriental, Bangkok set the benchmark for French fine dining, a position it continues to hold today.

Hotels such as The Peninsula Bangkok, Grand Hyatt Erawan Bangkok, and Dusit Thani Bangkok each brought their own identity, from lively late-night venues like Spasso to classic steakhouses and refined Thai dining rooms. Evenings often meant moving from one hotel to another, each offering a completely different atmosphere.
Around 20 years ago, Bangkok’s skyline began to change the way people dined. Rooftop restaurants emerged, adding drama and a sense of occasion. Vertigo at Banyan Tree Bangkok became a global icon, while V9, now Scarlett at Pullman, introduced a more relaxed, contemporary rooftop experience.
At the same time, standalone restaurants began to flourish, finally giving hotel dining serious competition. Sunday brunches were once the highlight of the week. Lavish buffets with free-flow champagne offered extraordinary value and became social events in their own right. Hotels like The St. Regis Bangkok and The Sukhothai Bangkok elevated the experience with seafood feasts, global cuisines, and even dedicated cheese rooms.
While many of these brunches have become more restrained over time, hotel dining in Bangkok still delivers remarkable quality and, in many cases, excellent value. For me, it remains one of the most enjoyable ways to experience the city.
Here are my top hotel dining spots in Bangkok:
Shang Palace – Shangri-La Bangkok
Classic, refined, and wonderfully nostalgic. It feels like stepping back into old-school Hong Kong. The dim sum and roast meats are exceptional.
The House on Sathorn – W Bangkok
Set in a beautifully restored colonial mansion, this is Thai dining with elegance and precision. The setting alone makes it special, but the food more than delivers.
The House of Smooth Curry – The Athenee Hotel Bangkok
Authentic Thai cooking with real depth, inspired by heritage recipes and regional flavours. Refined, but never losing its soul.
Zuma Bangkok – a Bangkok branch located at The St. Regis Bangkok
Modern Japanese dining at its best. Exceptional value compared to other cities and, in my view, even better than Nobu.

Riverside Buffet Experience – Anantara Riverside Bangkok Resort
A classic Bangkok evening. International stations, Thai specialties, live entertainment, and a beautiful riverside setting make this a must.
Anne-Sophie Pic At Le Normandie – Mandarin Oriental, Bangkok
Still the pinnacle of fine dining in Bangkok. Impeccable service and a true special occasion experience.

Penthouse Bar + Grill – Park Hyatt Bangkok
A sleek, modern steakhouse with exceptional cuts from around the world, including outstanding Australian wagyu. Stylish and memorable.
Salvia – Grand Hyatt Erawan Bangkok
Handmade pastas, classic Italian flavors, and a warm, timeless setting that continues to draw a loyal crowd.
Scarlett Wine Bar & Restaurant – Pullman Bangkok Hotel G
If you are looking for a great steak with sweeping rooftop views in a more relaxed, enclosed setting, this is a fantastic option. The value for money is excellent, and the beautiful cheese room adds a real European touch.
