The world’s most Michelin starred female chef reimagines Mandarin Oriental, Bangkok’s legendary French dining room through her philosophy of suffusion

The reopening of Le Normandie marks a significant moment for Bangkok’s fine dining landscape. At the heart of this new chapter is Anne-Sophie Pic, whose return to the restaurant brings both continuity and quiet transformation. Located within Mandarin Oriental, Bangkok, Le Normandie has long held a place in the city’s culinary memory. First opened in 1958, it was Thailand’s first French fine dining restaurant and remains one of its most storied. Pic’s arrival feels less like a takeover and more like a thoughtful continuation, shaped by personal history and deep respect for the restaurant’s legacy.
Anne-Sophie Pic’s connection to Le Normandie dates back to 1998, when she first cooked here during a gastronomic week that left a lasting impression. Decades later, that early encounter comes full circle. Today, she brings her philosophy of suffusion to Bangkok, a way of thinking about cuisine that focuses on aromatic layering and emotional resonance rather than technical display. As Pic explains, "I firmly believe that cuisine is a universal language, a space where cultures meet. Opening a new chapter at Mandarin Oriental, Bangkok, an iconic institution that embodies elegance and refinement, is an adventure that truly excites me. The menu introduces diners to Pic’s emblematic creations while subtly weaving in Thai influences. Dishes such as Hokkaido sea urchin, Brittany blue lobster with red fruits dashi, and wild sea bass with caviar speak to her mastery of balance between hot and cold, richness and restraint. From the land, Charolais beef fillet infused with Thai black garlic and smoked vanilla adds a gentle local accent. Desserts are equally poetic, particularly the white lotus millefeuille, a reinterpretation of her classic that draws on Thai symbolism through jasmine, rose, and ginger flower.

The strength of the Bangkok outpost lies not only in the cuisine but in the people entrusted to carry Pic’s vision forward. As she notes, “In Bangkok I am surrounded by a team whose journey has been deeply intertwined with my own. Tamaki Kobayashi, who has stood by my side for nearly 14 years, now leads the kitchen at Anne-Sophie Pic at Le Normandie with a brilliance I have long trusted. Alongside her, Edwin Cochet, Head Sommelier, brings a thoughtful vision of wine that enriches the dialogue of every dish. I am also delighted to welcome Yuko Kuwayama, Pastry Chef, whose artistry carries both delicacy and precision.”
The experience begins even before the first course. Guests are welcomed at the bar to enjoy cocktails and panoramic views of the Chao Phraya River. The beverage program mirrors Pic’s culinary language, with drinks designed to echo the aromatic profiles of the dishes. Pairings extend beyond wine to include tea based accompaniments, reinforcing the idea of cuisine as a dialogue between senses and cultures.
The space itself has been reimagined by Humbert & Poyet, who were tasked with preserving the soul of Le Normandie while introducing a contemporary sensibility. The result is an interior that feels calm and assured, where French elegance meets Thai craftsmanship. Jim Thompson fabrics, lacquered wood arches, sculptural details, and soft golden tones create a setting that reveals itself gradually, much like the cuisine. By day, the river brings light and movement into the room. By night, the atmosphere becomes intimate and enveloping.
Anne-Sophie Pic at Le Normandie is not about reinvention for its own sake. It is about evolution, memory, and the confidence to move forward without erasing the past.
