White Asparagus Season Arrives at Bull & Bear Bangkok with a Refined Spring Menu

Limited-time dishes spotlight one of Europe’s most prized seasonal ingredients, served 55 floors above the city

High above Ratchadamri, where Bangkok’s skyline stretches endlessly in every direction, Bull & Bear marks the arrival of spring with a short but considered menu built around one of Europe’s most quietly celebrated ingredients: white asparagus.
Available from Sunday, 11 May to Saturday, 31 May 2026, this seasonal offering brings a taste of Germany’s asparagus harvest to the city, showcasing the ingredient in a series of dishes that lean into its natural delicacy rather than overpower it.

Unlike its green counterpart, white asparagus is grown entirely out of sunlight, giving it a pale color and a softer, subtly sweet flavor. Its appeal lies in restraint, something the kitchen here understands well. Rather than overcomplicate, each dish is designed to let the ingredient speak, supported by thoughtful pairings and precise technique.
The menu opens with a Hokkaido scallop carpaccio, where thin slices of scallop are layered with white asparagus salad and lifted with a lemon truffle vinaigrette. It’s light, clean, and a natural way to introduce the ingredient. From there, a pan-fried turbot arrives with grilled asparagus, pistachio purée, buttered sweet peas, and a truffle and morels jus, adding depth without losing balance.
For something richer, the Saga Wagyu and white asparagus risotto delivers a more indulgent take, combining the creaminess of the rice with the umami of Wagyu and the gentle bite of asparagus, finished with black truffle and lemon zest. The signature Mayura MBS9 striploin, meanwhile, stays true to the restaurant’s steakhouse roots, pairing premium beef with grilled asparagus, confit potato, morel mushrooms, and a Madeira mushroom cream.

This seasonal menu sits comfortably alongside Bull & Bear’s broader offering, which continues to draw diners for its raw bar selections and eucalyptus wood-grilled steaks, a defining element that adds a subtle smokiness to the meat.
The setting plays its part too. Perched on the 55th floor of Waldorf Astoria Bangkok, the restaurant blends a New York-inspired steakhouse sensibility with Bangkok’s unmistakable skyline, making it as much about the atmosphere as the food.
The White Asparagus Menu is available for lunch from 12:00 PM to 3:00 PM and dinner from 5:30 PM to 10:30 PM, with prices starting from THB 850++ per dish.
