An ingredient-first philosophy defines a new chapter for Duet, where French precision meets seasonal expression in Bangkok

In a city where fine dining continues to evolve with confidence, Duet by David Toutain at The Ritz-Carlton, Bangkok refines its voice with the launch of two new tasting menus: the Signature and the Discovery. More than a seasonal refresh, this marks a defining step forward for Duet, one that sharpens its identity around an ingredient-first philosophy, guided by precision, restraint, and quiet creativity.

Since its opening, Duet has positioned itself as a space where French culinary tradition meets a modern, expressive sensibility. With these new menus, that balance feels more intentional than ever.

Two Menus, One Philosophy

At the core of Duet is a simple yet powerful idea: the ingredient leads. Exceptional sourcing, seasonality, and transparency remain central, with each dish designed to highlight the integrity of its components. Provenance cards accompany the meal, inviting diners to trace each ingredient’s journey and deepening the connection between kitchen and table.

The cuisine is grounded in French technique—sauces, structure, and discipline—but interpreted through a contemporary lens shaped by the collaborative vision of Chef David Toutain and Head Chef Valentin Fouache. The result is food that feels both refined and personal, rooted in tradition yet unmistakably current.

The Signature Menu: A Complete Expression

The Signature Menu presents the most complete expression of Duet’s culinary identity. It is a composed journey that brings together the restaurant’s most emblematic creations alongside the finest seasonal produce.

Highlights include Alaskan King Crab paired with caviar, layered with delicate notes of cream and marine salinity, subtly lifted by vanilla and kaffir lime. Brittany Blue Lobster, a staple since the restaurant’s earliest days, is reimagined with épicéa—spruce treated with a citrus-like brightness—alongside a rich homardine sabayon. Normandy scallops, gently grilled over embers, are complemented by cauliflower and a deeply savory X.O. sauce, finished with Jura yellow wine for added depth.

The menu is available until further notice at THB 5,800++ per person. Optional pairings are available at THB 3,200++ for wine and THB 1,600++ for a zero-proof experience.

The Discovery Menu: A Refined Introduction

For a lighter yet equally considered experience, the Discovery Menu offers a more concise progression while staying true to Duet’s philosophy. Designed to reflect the chefs’ current inspirations, the menu evolves with seasonality and market availability, ensuring that no two visits feel exactly the same. Select choices allow for a degree of personalization, making it an ideal entry point into Duet’s world or a fresh perspective for returning guests.

The menu is available until further notice at THB 4,500++ per person. Pairings are available at THB 2,600++ for wine and THB 1,200++ for zero-proof options.
