Masque From Mumbai Is Coming to Bangkok for a Limited-Time Dining Residency

Masque Mumbai and Chef Varun Totlani bring contemporary Indian gastronomy to Siam Kempinski Hotel Bangkok this June

Bangkok’s dining scene is about to welcome one of Asia’s most celebrated restaurants as Siam Kempinski Hotel Bangkok announces an exclusive culinary residency with Masque Mumbai, currently ranked No. 15 on Asia’s 50 Best Restaurants 2026 and widely regarded as India’s leading restaurant.


Taking place from Thursday, 4 June to Tuesday, 8 June 2026, the residency marks Masque’s first-ever appearance in Bangkok, bringing Chef Varun Totlani and his team to Thailand for a series of lunch and dinner services centered around ingredient-driven contemporary Indian cuisine.

Under Chef Varun Totlani’s direction, Masque has become known for redefining modern Indian gastronomy through the use of local ingredients, regional culinary traditions, and contemporary techniques. Rather than relying solely on familiar restaurant-style Indian dishes, the restaurant focuses on showcasing India’s diverse produce and culinary heritage in more progressive and refined ways.


During the Bangkok residency, guests will experience an eight-course tasting menu highlighting premium ingredients sourced from Thailand, including squid, clams, Thai wagyu, sea buckthorn, aromatic herbs, and masala spices.


The residency also reflects Bangkok’s increasingly important role as a regional dining hub, where international chef collaborations and culinary pop-ups have become major attractions for local diners and traveling food enthusiasts alike.

Chef Varun Totlani himself represents a new generation of Indian chefs shaping the country’s fine dining landscape. Born and raised in Mumbai, he developed an interest in cooking from an early age before studying at The Culinary Institute of America in New York. He joined Masque as part of the opening team in 2016 and was later appointed head chef in 2022.


Under his leadership, Masque has continued its remarkable rise on the international culinary stage. In addition to ranking No. 15 on Asia’s 50 Best Restaurants 2026, the restaurant has also been named India’s Best Restaurant for five consecutive years and was ranked No. 68 on The World’s 50 Best Restaurants list in 2025.


One of the residency’s most anticipated moments arrives on Tuesday, 9 June 2026, when Chef Varun Totlani collaborates for one night only with Thai chef Weerawut Triyasenawat. The special culinary pop-up promises a dialogue between Indian and Thai culinary roots, interpreted through modern techniques and contemporary fine dining perspectives.
