From Bangkok rooftops to beachside resorts, khao chae takes center stage this April with seasonal menus across Thailand

As temperatures rise and Songkran approaches, one dish quietly reclaims its place at the table: khao chae. Light, fragrant, and steeped in tradition, this centuries-old Thai summer delicacy is now being reintroduced across the country through a series of seasonal menus by Marriott Bonvoy.
Available throughout April, the campaign brings khao chae into focus at 16 restaurants across Bangkok, Phuket, Khao Lak, Hua Hin, and Chiang Rai, offering both classic interpretations and more contemporary presentations of the dish.
A dish rooted in ritual and refreshment
Khao chae, which translates to soaked rice, is designed for Thailand’s hottest months. At its core is chilled rice immersed in jasmine-scented water, often perfumed with candle smoke, served alongside an array of intricate condiments that balance sweet, salty, sour, and spicy notes.
Originally popularized in the Royal Thai court during the reign of King Rama V, the dish has since become synonymous with summer and Songkran. Today, it remains one of the most refined examples of Thai culinary craftsmanship, where preparation is as important as presentation.

Where to try khao chae in Bangkok
In Bangkok, several hotel restaurants are leaning into both tradition and setting. At The House of Smooth Curry, the dish highlights rice sourced from Amnat Charoen, reinforcing a farm-to-table approach. Over at The Siam Tea Room, chefs infuse the rice with aromatic candle smoke, while also offering a riverside experience at its Asiatique outpost.
For those looking to pair khao chae with a view, Le Du Kaan presents the dish 55 floors above the city, while Thara Thong delivers a more traditional setting in a hand-carved teakwood pavilion by the Chao Phraya River.
Elsewhere, venues such as Praya Kitchen and Bangkok Baking Company bring their own interpretations, including takeaway sets designed for at-home enjoyment.

Beyond the capital
Outside Bangkok, the experience shifts with the landscape. In Chiang Rai, Latest Recipe serves khao chae overlooking the Kok River, adding a sense of calm to the already cooling dish.
Down south, beachside resorts offer a more relaxed take. At Veranda, guests can pair khao chae with fruit carving experiences, while Ta-Krai and Goji Kitchen & Bar serve the dish alongside ocean breezes. In Hua Hin, Sundara Sport Lounge presents a Phetchaburi-style version that leans into regional flavors.

A seasonal ritual worth revisiting
