Zero-Proof Precision: A First Look at Bar Stainless

A pop-up that tests whether technical beverage design and Space-Age aesthetics can redefine Bangkok’s ritual of the night without the alcohol
In a city where social life is often measured by the pour, Bar Stainless arrives at Sukhumvit Soi 20 with a counter-intuitive premise. Situated within the heritage walls of STILL House, an early modern Bangkok residence coexisting with modern life, this non-alcoholic pop-up is less a compromise for the sober-curious and more a deliberate study in clarity.
Founded by architect Ekaphol Reungkitjanuwat and fashion designer Milin Yuvacharuskul, the concept shares the creative DNA of the Blessing Shophouse speakeasy but pivots toward a state of being "unmarked." The space is an exercise in restraint, shifting vintage opulence into an understated, Space-Age modern glam where raw, reflective materials meet a high-fidelity soundscape curated by Zonicvision.
The project is a firm rejection of the mocktail label. As Milin explains, “I want this space to be a new option in the Bangkok drink scene. We don’t call our drinks mocktails, because they’re not mocking or trying to replace the alcoholic version; they are cocktails in their own right, complete with depths, layers, and creativity. The only difference is the spirits are zero-proof and not just fruit juice and syrups.”
This intent is funneled into a menu built on six natural elements: Earth, Water, Air, Fire, Wood, and Metal. The results are technical and often surprising, from the Earthy (Strata³), a zero-proof rum base layered with beetroot and aged ginger, to the Metally (Diamond & Gold), which uses a non-alcoholic pale ale base and apple vinegar to achieve a sharp, mineral finish.
The drink program is extensive, spanning a 0.0 Tea Series, utilizing siphoning and clarification, to non-alcoholic wines and craft beers, all paired with savory and sweet plates by Larder. Ultimately, Bar Stainless succeeds by acknowledging that the ritual of the bar, the glassware, the atmosphere, and the communal rhythm, is a culture worth preserving independent of intoxication. It is a calculated, polished experiment in what happens when you strip away the interference of alcohol to focus on the honesty of the ingredient.
Bar Stainless is located at STILL House (SC Asset), Sukhumvit Soi 20. It is open daily from 10:00 AM to 9:00 PM until 15 April 2026.
